WHere is a simplified version of a cocktail from the seasonal cocktail list. Designed as a batch prepared mix that's packed with the tastes associated with Christmas time, rendering it ideal for hosting a celebration. Save the extra citrus syrup you can use for breakfast cocktails, sweets, or to make additional servings of the drink.
The Bikini Cocktail
Yields 10 guests
To make the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Put the listed components in a pot, bring to a simmer, stirring to dissolve. After that, take off the heat allowing it to reach room temperature entirely. Transfer into an sterilised bottle, seal and refrigerate it in the fridge, it can be stored for around four weeks.
To make Premix: Mix all the liquid ingredients into a sizeable container, let it rest for one hour, then filter it , ideally through a fine cloth, so it's fully clarified.
When ready to serve: Measure 85ml from the batch mix into a cocktail shaker containing ice, and stir lightly for a minute to cool it down. Filter into a frosted cocktail glass or similar, garnish with the cranberries and finish by giving it a brief mist of mandarin oil over the top.
